Recently, the term “Japanese food” was registered in the UNESCO Intangible Cultural Heritage as a traditional culinary culture of the Japanese people; “Japanese cuisine” restaurants now line up around the world.
However, for better or worse, as Japanese food takes advantage of the climate unique to Japan and as if it is stuck to its freshness and beauty, it is quite difficult to find authentic Japanese cuisine abroad.
Actually what is called “cuisine” in Japan, unlike just any food, refers to the message from the cook to the people who eat it. In Japanese cuisine, not only the cooked food, but the eating space, vessels, leading up to serving, have a message in it. There is no country like Japan where serving vessel types are so many. To become a cook, one starts choosing from the vessels until the serving, and gathers all of the story.
